Cherry ripe bliss balls

These are seriously tasty treats, perfect to make while fresh cherries are around!

Ingredients: (Makes 20 large or 40 small bliss balls)

  • 400g dried dates

  • 1.5 cups unsalted nuts/seeds of your choice (I used almonds, cashews and sunflower seeds today)

  • 1/4 cup cocoa powder

  • 1/2 cup desiccated coconut (plus extra for rolling)

  • 12 cherries pitted (fresh, frozen, canned or jarred)

How to make:

  1. Soak dates in 1/2 cup boiling water for 10 mins, occasionally stirring, then drain all the liquid off, leave aside

  2. Blend the nuts/seeds, cocoa and coconut until the consistency of fine bread crumbs. I use my Kenwood food processor on my Kenwood Chef for this

  3. Add the dates and cherries and blend to combine. If the mixture is too wet, add extra coconut until it’s stiff enough to stay in a ball shape

  4. Roll into balls and coat in desiccated coconut

  5. Store in the fridge
