Chicken and mango salad

Do you need to take a plate to a friends for lunch or dinner? This is a perfect salad to brighten up any table this summer.

Ingredients:

  • 1 large bag of mixed salad leaves/mesculan

  • 2 free-range chicken breasts – grilled or lightly pan fried, cooled then shredded (or you can use a free-range hot chicken if you can get one from the supermarket)

  • 1 ripe avocado, cut into chunks

  • 3 large tomatoes cut into chunks

  • Handful of cashew nuts

  • 1 fresh mango peeled and sliced or 1 can of mango drained and sliced 

How to make:
Mix all the ingredients together and there you go – easy as that!

Serve it up - enjoy this salad with a slice of grainy bread or a few grainy crackers if you need starch at lunchtime. Or just add some chickpeas or leftover roasted veggies such as kumara and potato.
