Choc n cherry muesli bars
These are great for kid’s lunchboxes but great for adults too of course!
Ingredients: (makes 15-20 squares)
1 cup oats
½ cup pitted dried dates, finely chopped
¼ cup chopped cherries or cranberries
3 tablespoons runny honey
3 tablespoons cocoa powder
½ cup plus 1½ tablespoons peanut butter
½ cup mixed nuts, chopped
How to make:
Heat the oven to 180°C/fan 160°C/gas 4. Line a shallow 16x25cm baking tray and a baking sheet with baking paper.
Put the oats on the prepared baking sheet and cook in the oven for 10–15 min until toasted.
Meanwhile, toss the dates with the remaining ingredients in a medium bowl. Add the baked oats to the bowl and mix everything together with your hands. Add a splash of water if needed to bind.
Transfer the mixture into the prepared baking tray and press the mixture flat so it’s tightly packed.
Put in the freezer for 15 min to settle and harden, before cutting into 15-20 squares. Transfer to an airtight container and keep in the fridge for up to a week.

To make this nut free: Use tahini and seeds instead of chopped nuts.
To make this gluten free: You can use a gluten free cereal instead of the toasted oats, you may need to adapt the quantity used.
