Crispy fritters

These delicious crispy fritters are packed with protein with 15g per serving. 
These make for a great option for Meatless Monday or to share with your vegetarian friends. 

Ingredients: (serves 4)

  • 300g firm tofu 

  • 2 large eggs, beaten

  • ¼ cup of chickpea flour (can be subbed for plain flour) 

  • 2 tbsp milk 

  • ½ cup shredded greens – Spinach, Bok choy, Napa cabbage etc 

  • 1 clove garlic, crushed 

  • 4 spring onions, thinly sliced 

  • 1 tbsp soy sauce 

  • Sesame oil for cooking 

  • Handful of coriander 

How to make:

  1. Remove excess water from your tofu by placing between 2-pieces of paper towel to soak up moisture, then grate it onto a chopping board. Pat again to remove any excess water. 

  2. In a bowl, combine chickpea flour, eggs, milk, grated tofu, spring onions, crushed garlic, soy sauce and shredded greens. Mix well. 

  3. Heat oil in a large non-stick frying pan over a low to medium heat 

  4. Take around three heaped tablespoons of the mixture and form into small flat fritter about 10cm in diameter as you would with a corn fritter or similar 

  5. Depending on the size of your pan you will be able to cook around 2-4 cook fritters at a time. Cook them for around 3 minutes each side or until golden and cooked through.  Add a little more oil and continue until in small batches until complete. 

Serving tip:
Serve with Asian Greens and sweet chilli sauce.
