Egg rolls

Ingredients: per roll

  • 2 eggs beaten

  • 1 wholegrain wrap

  • Handful of veggies of your choice 

  • Handful of grated cheese  

  • Oil for cooking

How to make:

  1. Whisk up the eggs together and fry in a lightly oiled non-stick frying pan. Swirl around in pan and add veggies and grated cheese. 

  2. Place the wrap immediately on top of the egg and push down so the egg and cheese start to stick to the wrap. 

  3. Cook for a minute or two then flip over and lightly brown the wrap side. 

  4. Remove from pan and roll the whole thing up and enjoy! 

These tasty, filling wraps are great like this but why not try with chopped herbs, or maybe some thinly sliced olives or mushrooms? Or spread your wrap with tomato paste or pesto before adding to the pan.  

Tip: Ideally use a frying pan the same size as the wrap you are using for best results!
