Fruit bread with a fibre boost
A delicious fruit loaf with the added goodness of nuts and seeds to boost the fibre!
Ingredients:
400g high grade (or strong bread) flour
1 tsp salt
1 tbsp caster sugar
10g fast action dried yeast
160mls milk (luke-warm)
100mls water (luke-warm)
1 tsp ground cinnamon
2 tsps mixed spice
Zest of 2 oranges
1 cup sultanas
½ cup cranberries
½ cup pumpkin seeds
3/4 cup walnuts (chopped)
¼ cup chia or poppy seeds
How to make:
Put flour, spices, salt, sugar, yeast, milk and water into a large bowl. I make this loaf in my Kenwood Chef.
Mix together until combined. (In the Kenwood Chef, this takes about 1 minute on speed 4.)
Knead for 8-10 minutes until smooth and stretchy. (In the Kenwood Chef, I use speed 1 for this.)
If you have taken the dough out of the bowl, put it back in, cover the bowl with a tea towel and then leave to double in size, this will take about an hour. When I use my Kenwood Chef I just leave the dough in the bowl and set aside with a tea towel on top.
When the dough has risen, sprinkle over the dried fruit, nuts and seeds and knead into the dough.
Put the dough onto a greased baking tray in whatever shape you would like your final loaf to be, cover in cling film or put a piece of baking paper on top then cover with a tea towel.
Leave the dough to double in size again for another hour.
Cook in a pre-heated oven at 190 degrees C for 25-30 minutes.
Adapt it
You can use whatever dried fruit you like – chopped apricots, figs and dates all work well. The same goes for the seeds - mix them up however you like. A few walnuts are a nice addition to this loaf too.
