Homemade gnocchi...therapy and food at the same time!I had some left over mash in the fridge and was wondering what to do with it.  My kids love gnocchi but I’m very reluctant to buy it as it is very high in salt - way too much for kids to have frequently - so I thought I’d give the homemade version a whirl.It was so easy and rolling it out was like therapy, a mindful activity at its best.  A great one for the kids to help with too!

Ingredients:

  • 2 cups of mash (about 4 medium potatoes)

  • 1 egg (beaten)

  • approx 1 - 1.5 cup of high grade flour (or 00 flour)

How to make:

  1. Add the beaten egg to the mash and then sift in 1 cup of the flour, stir gently to combine.

  2. Add additional flour until the mixture combined and creates a soft dough that is no longer sticky, but not so dry it is crumbly.

  3. Cut into 8 chunks and roll each of them out on a floured surface to approx. 20cm long and cut into bite size chunks, put an indent into each with your thumb or a fork.

  4. To cook, add to boiling water for 3-4mins until they float to the surface. 

Adapt it:

  • For a lighter gnocchi if you have one, you can use a potato ricer instead of mashing the potatoes

  • 00 flour is very fine pasta flour, if you have it or can get it, it will make the gnocchi even smoother

Serving tip: Serve a small portion loaded up with my delicious veg-loaded tomato sauce.  You could also add a piece of fish (I always have small portions frozen that I buy when fish is on special and then I can grab out a portion when I need) for some extra protein.
