Herby chickpea fritters
I have recently been experimenting with different types of flours and my latest fav is chickpea or gram flour which is naturally gluten free too. These fritters are a quick and easy lunch, light dinner or great for entertaining!
Ingredients:
1 small red onion
Large handful of fresh coriander or parsley
2 cups of chickpea flour/gram flour
1 tsp baking powder (GF if needed)
3 eggs
½ tsp ground coriander
½ tsp ground cumin
3/4 cup of water
Pinch of salt/black pepper
Oil for cooking
Optional: Pinch of chilli powder or flakes
How to make:
Finely chop the red onion and herbs. I do this using my amazing Kenwood food processor.
Add the remaining ingredients into the food processor and whizz to combine.
Heat 1 tbsp of oil in a non-stick pan and add tablespoons of the mixture to the pan, fry for 1-2 minutes each side until cooked through.
Serve with salad and a dollop of yoghurt or sour cream and sweet chilli sauce.
Adapt it:
Don't have red onion? No worries, white onion is fine.
Don't have those spices in? 1 tsp of curry powder is a great substitute.
You can also add 1/2 a capsicum in there too for extra colour and flavour, just add to the blender at the start with the herbs and onion.
Love corn? Add some in after blending! this is a versatile base recipe you can adapt to suit you!
