High-Protein Veggie Frittatas

Quick and easy to make, these vegetable frittatas are fantastic to have on-hand for a high-protein snack or a healthy option to add to your breakfast, lunch, or even dinner alongside a delicious salad or with extra veggies.

Ingredients

  • 8 eggs

  • ¼ cup milk

  • ½ cup cottage cheese (regular fat, not lite)

  • 1 cup grated cheese

  • 2 large handfuls of baby spinach

  • 1 cup corn (defrosted if frozen)

  • 1 red onion, finely diced

How to make

  1. Preheat oven to 180°C (350°F)

  2. Whisk eggs and milk together in a bowl.

  3. Add the rest of the ingredients and stir to combine.

  4. Spoon mixture into a muffin tray - silicone trays or muffin cases work best. If using a metal tray, grease well.

  5. Bake for 15-20 minutes or until cooked through.

Makes 8-12 frittatas, depending on tray size.

Adapt it: You can add any veggies you like into this, capsium works really well when it is in season as well as chunks of courgette. You can also swap the 1/4 milk for an additional 1/4 cup of cottage cheese too.

TIP: Use regular cottage cheese, if you use the lite one they will go watery.
