Lime cheesecake pots

Love limes? You will love this! My quick and easy lime cheesecake pots.

Ingredients: (serves 4)

  • 2 cups of custard

  • 125g light Philadelphia cheese

  • 3/4 cup natural yoghurt

  • 1 cup mixed unsalted nuts

  • Zest and juice of 2 limes (if using kaffir limes, start with juice and zest of ½ and see how you go, they can be overpowering!)

  • 3/4 cup dates (pips removed)

  • 1/2 cup desiccated coconut

How to make:

  1. Start by soaking the dates in 3 tbsp of boiling water.

  2. Blend the nuts and coconut together until they resemble breadcrumbs. I used my Kenwood Triblade hand blender for this.

  3. Add the dates to the blender (reserve the water they were soaking in).

  4. Blend to combine, add some of the soaking water if required.

  5. Divide the mixture into 4 glasses, dishes or jam jars to make the base of the cheesecake pots.

  6. Clean the bowl of your food processor/blender and then add the custard, philly cheese, yoghurt and zest and juice of the lime. Pulse to combine.

  7. Spoon the cheesecake mixture over the base and chill for at least an hour.

Note: I used kaffir limes for this the first time, but they are quite full on (and probably best in water or with a GnT) so I would use normal limes if possible, or just LESS of the kaffir limes.
