Mini egg savouries

Looking for something as a healthy lunch or satisfying snack? I whipped these together for my chat on TVNZ Breakfast when I was talking about brain food!

Eggs are a great, affordable, all round nutrition packed food with B vitamins and choline (a nutrient) both super helpful at keeping your brain healthy!

Ingredients:

  • 6 eggs

  • 1/4 cup sour cream or a few tbsp milk

  • 1 courgette grated and water squeezed out (equally can use any other veg...spinach, broccoli, whatever you have in)

  • 1/2 cup frozen corn (defrosted)

  • 1/2 red onion finely chopped

  • Any herbs you like

How to make:
Beat the 6 eggs and then mix all the other ingredients in.  Pop into a greased baking tray (I like to use silicone so it doesn’t stick), top with a little grated cheese and cook for about 15 mins until set at 180 degrees.Basically...it’s a mini-sized frittata!
