Mini eggplant pizza

These delicious mini pizza bites are perfect for a light lunch, starter or nibbles when you are entertaining! The base is....eggplant, and this recipe is possibly the most delicious way to enjoy this fabulous vegetable. 

Ingredients: For 8-10 mini pizza rounds

  • 1 large eggplant sliced into 1cm thick rounds

  • 2 tbsp tomato paste

  • 1 tbsp tomato ketchup

  • Herbs of your choice (I used fresh basil, you could use dried mixed herbs or oregano instead)

  • 1/2 cup grated cheese (I used mozzarella)

How to make:

  1. Pre heat oven to 180 degrees celsius.

  2. Line a tin with non stick paper and place the eggplant rounds onto the paper.

  3. Mix the tomato paste and ketchup together then spread a thin layer over the eggplant rounds.

  4. Sprinkle over the herbs and cheese.

  5. Bake for 5-10 mins until the cheese is golden brown and eggplant is nicely cooked.
