One Pot Mexican Quinoa
A quick and easy nutrition packed dish that is ready in no time!
Ingredients:
1 cup quinoa
1 ½ cups of frozen corn
1 can of black beans, drained and rinsed
1 tbsp sliced jalapenos (optional)
1 red onion, finely sliced
1 cup stock, ideally reduced salt
1 can of chopped tomatoes
1 tsp chilli flakes (optional)
½ tsp ground cumin
½ cup of water
To serve:
Juice of 1 lemon or lime
Handful of chopped coriander or parsley
Chopped avocado (optional)
How to make:
Add all ingredients together in a large non-stick pan, bring up to a simmer then turn the heat down and place the lid on the pan.
Cook over a low heat for 15-20 minutes or until the quinoa is cooked. Add a splash more water if needed.
When cooked, add lemon/lime juice to taste, chopped herbs and top with chunks of avocado.
Serve and enjoy!
