Pantry raid choc orange truffles

Ingredients:
2 cups of pitted dates
Zest of 1 large or 2 small oranges
Juice of 1 large or 2 small oranges
1 cup of nuts/seeds
1 cup of rolled oats or approx. 1½ cups of cereal or broken biscuits, or use a combination - works best with a combo
Optional: Desiccated coconut, chopped nuts or melted chocolate to coat
How to make:
Start off by chopping the dates in half and soaking them in 2tbsp of boiling water
Next, blend the nuts, seeds and biscuits/oats or cereal in the food processor until they are like coarse breadcrumbs, remove from the food processor
Add the dates into the food processor along with any water remaining in the bowl they were soaked in and the juice of the orange, blend until it starts to become smooth.
Add ¾ of the dry mixture back into the food processor and blend, add the last ¼ a tablespoon at a time until you get the right consistency. If there is any left over, you can use this to roll the balls in afterwards. If you add it all in and it is a bit too dry, just add the juice of the second orange or a splash of boiling water. If you add it in and it is too sticky, then blend in a few tbsp of desiccated coconut or rolled oats.
Spoon tablespoons of the mixture out and roll into balls in your hands. You can coat these in desiccated coconut, chopped nuts or melted chocolate.
