Quick and easy lamb koftas

These easy-to-make lamb koftas are a simple and quick family meal.  Serve them up with brown rice, salad and tzatziki and/or hummus, and leftover koftas are perfect in a whole grain wrap for lunch the next day!

Ingredients:

  • 500g lamb mince

  • 1 red onion, finely chopped

  • 3 garlic cloves

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • ½ tsp of cinnamon

  • 1 tbsp of tomato paste

  • 2 slices of wholegrain bread (crumbed)

  • 1 egg

  • Salt and pepper to season

How to make:

  1. Set up your food processor (I use my amazing  Kenwood Food Processor) with the large grating disk and grate a red onion into the food processor bowl.

  2. Remove the grating disc and replace with the chopping blade and blitz the bread, parsley, spices, herbs and garlic clove along with the onion until you get find breadcrumbs.

  3. Add lamb mince, egg and tomato paste into the food processor along with the other ingredients and pulse until blended.

  4. Season with salt and pepper.

  5. Line a baking tray with baking paper, roll mixture into approx 4cm long oval balls and space evenly on tray.  Place the tray in a preheated oven at 180 degrees and bake for around 10 minutes. 

Note: Depending on the size you roll, this recipe can make around 20-24 koftas. 

Tip: Make the mix minus the lamb and egg and freeze. Then all you have to do is mix in lamb and add an egg and you are ready to go!
