Black bean brownies

Looking for a delicious way to get more pulses in your diet?  Try these chocolate brownies and you'll be surprised how good they taste!

Ingredients:

  • 1 can black beans, drained and rinsed

  • ¼ cup cocoa powder

  • ½ cup of rolled oats or milk oaties

  • ½ cup brown sugar or honey

  • ¼ cup of oil (or melted butter)

  • 2 tsp vanilla extract

  • 1 flat tsp baking powder

  • ½ cup chocolate chips

How to make:

  1. First set your oven at 180 degrees and lightly grease a small (20cm x 20cm or similar) baking tray.

  2. Put all ingredients, except the chocolate chips, into a food processor.  If you don't have one, a large mixing bowl.  I used my Kenwood Chef to make it nice and easy.  Mix for a good 5 minutes or until the beans are well mixed into the rest of the ingredients and it is nice and smooth.

  3. Pour into your greased tray and sprinkle the chocolate chips evenly on top.

  4. Bake for around 10 minutes until quite firm but be careful not to let it overcook as it will become dry.

  5. Cool and cut into small squares.
