Omelettes

The ultimate feel good, easy meal!! I’m forever singing the praises of this nutrition packed, super versatile meal. Eggs are an affordable way to eat well even when your busy!

Ingredients:

  • 2 eggs - beaten

  • 1 courgette - grated

  • Chopped mint

  • Zest of 1/2 lemon

  • Black pepper to taste

  • Grated cheese

How to make:

  1. Beat the eggs, add the courgette to the eggs. It’s a good idea to squeeze some of the water out by wrapping the grated veg in paper towel.

  2. Add the mint, lemon and black pepper.

  3. Heat a splash of oil in a non stick pan and cook for a few mins on high then reduce the heat and cook for another 5 or so mins until the egg starts to set.

  4. Then, sprinkle over grated cheese, pop under the grill and hey presto, dinner for one, done!!
