Reindeer Cookies

If you are keen to get in the festive spirit, these reindeer cookies are quick, easy and delicious. I used my flour-free gluten-free cookie mix recipe as a base because I didn’t have any flour, but any cookie mix will work.

Ingredients: (makes approx 12)

  • 1 cup peanut butter

  • ¾ cup brown sugar

  • 2 tbsp cocoa powder

  • 1 tsp vanilla extract

  • 1 egg, beaten

  • ½ baking soda

To decorate:

  • 24 pretzels

  • Edible eyes or white/dark chocolate

  • 6 glace cherries, cut in half

How to make:

  1. Pre-heat your oven to 180 degrees C and line 2 baking trays with baking paper.

  2. In a mixing bowl, beat the peanut butter, vanilla extract and egg together until smooth.

  3. Add the brown sugar, baking soda and cocoa powder and mix until well combined.

  4. Put spoonfuls of the mixture onto the baking tray leaving a good gap between the spoonfuls as they will spread.

  5. Bake for 5 minutes, then remove from the oven and press in the pretzels while the mixture is still soft.

  6. Bake for another 5 ish mintues until soft to the touch, but cooked.

  7. Cool completely before removing from the tray so they don’t break.

  8. Decorate with edible eyes and a cherry nose!
