Scrummy Seed Bites
These delicious super seedy bites are full of goodness and are perfect for an afternoon energy boost.
Ingredients:
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup hemp seeds
1/4 cup chia seeds
3/4 cup dried cranberries
2 cups puffed rice
50g butter
1/3 cup honey
1/3 cup peanut butter
Optional: 10-12 squares of melted chocolate to drizzle on top
How to make:
In a mixing bowl add sunflower seeds, pumpkin seeds, chia seeds, hemp seeds, dried cranberries and puffed rice, gently mix until combined.
In a small saucepan, over a medium heat, make a caramel by add the butter and honey and bring to the boil over a medium heat. Allow it to bubble. It will look a bit like a foam and begin to darken in colour. Cook until you can draw a spatula or wooden spoon through the middle and it leaves a channel. If you don’t cook it for long enough, it can mean that the bites don’t hold together so well. You also don’t want to burn the mixture so keep an eye on it the whole time. (I used my amazing nonstick, PFAS-FREE pan from GreenPan to achieve this)
Add the peanut butter to the caramel mixture and stir through, then pour it into the seed mixture and mix until well combined.
Transfer the mixture into silicon muffin trays or paper cases and press the mixture down firmly. They can go slightly crumbly if you don’t press the mixture down firmly enough, so be sure to pack it in.
Drizzle with melted chocolate, pop in the fridge to chill for a good couple of hours.
Adapt it: Hemp seeds can be subbed for a combo of sesame and flaxseed if preferred or a combo of all 3, find what combo works best for you! You can also substitute some of the seeds for nuts. If you want to make totally nut free, swap the peanut butter for tahini.
