Soup for the Soul
This is quite easily the best soup I have ever made! My lovely friend Claire, another fellow brit who is my website designer and designed ‘It’s a Beautiful Day’, gave me a frozen container of the soup and I begged for the recipe and have been making it ever since.
Ingredients:
6 tsp olive oil
1/2 tsp cumin seeds
1 chopped onion
1 clove garlic, crushed
2 carrots chopped
2 sticks celery, chopped
1/2 tsp chilli powder
1/2 tsp turmeric
1 tsp ground coriander
185g(6oz) red lentils washed and picked over
1 litre veg stock
200mls water
1 bay leaf
Black pepper
How to make:
Heat oil in a saucepan over a medium heat, add cumin seeds. As soon as seeds begin to pop, add onion and cook until golden.
Add garlic, carrots, and celery and cook gently for 10min until soft. Stir in all the spices and cook for a further 1 min before adding lentils.
Pour in stock, water and bay leaf and bring to the boil, then simmer for 1 hour, skimming the surface if necessary.
Remove bay leaf and add pepper to taste.
